Sprinkled Apple and Cinnamon Cake


For the cake:

• 2 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup sour cream or Greek yogurt
• 2 medium-sized apples, peeled, cored, and chopped into small pieces

     For the topping:

• 1/4 cup granulated sugar
• 1 teaspoon ground cinnamon


1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set this dry mixture aside.
3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using a hand mixer or a stand mixer.
4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
5. Gradually add the dry ingredients into the wet ingredients, alternating with the sour cream or Greek yogurt. Mix until just combined. Be careful not to overmix.

11. You can optionally dust the cooled cake with powdered sugar or make a simple glaze with powdered sugar and a little milk for added sweetness.
